Atollspeed AS301: The new high-speed oven generation brings together culinary versatility and speed

Whether it’s a vegan breakfast bagel, a light lunch menu or a hearty snack for in-between: today’s guests expect a wide choice of high-quality food at any time of day – tailored to personal preferences and dietary habits. This is exactly where the Atollspeed AS301 – the latest generation of Atollspeed high-speed ovens – demonstrates its strengths. It supports operators of a wide range of food concepts in preparing complete meals fresh and in consistent quality within seconds – with minimal staffing requirements and a small footprint. In addition to proven high-speed technology, the AS301 features new enhancements for greater safety, durability and operating comfort. These include an optimised baking chamber, a new food carrier and a door safety system for operation during service. Choosing Atollspeed, however, means far more than investing in technology alone. The core of the new Atollspeed AS301 is the further developed baking chamber and the new food carrier. Both ensure more even preparation – and therefore even higher food quality. The new door safety system, which prevents the door from being opened during operation, also increases preparation safety. At the same time, it protects the microwave technology. The now concealed microwave antenna further enhances the robustness and durability of the Atollspeed AS301: the cover makes the antenna less susceptible to fatty ingredients and also simplifies daily cleaning. New accessories such as a railing and storage surface for the top of the oven, a range of pans (smooth, ribbed, round, with cavities), as well as digital connectivity options, make the Atollspeed AS301 a future-proof solution for a wide variety of applications – from bistros and system catering to hotels and institutional catering, as well as bakeries, petrol stations and C-stores.

 

Complete plated meals from the AS301 – straight to the table
Snacking continues to be a major trend in the out-of-home market. However, the offering behind it has evolved significantly. Today, demand is for all-day concepts that range from hearty breakfast options and vegan or vegetarian bowls to traditional plated meals. With the Atollspeed AS301, this entire variety can be served within minutes.
To regenerate a wide range of dishes precisely, Atollspeed combines impingement heat for even browning and crispness with microwave technology for efficient heating. Individually programmable cooking profiles for each dish ensure that the desired texture, juiciness and quality of the individual components are retained during regeneration. As a result, dishes such as Thai curry, duck breast with crispy skin, goulash with dumplings or Kaiserschmarrn for dessert can all be prepared with equally reliable results. The basis for this is the right technology combined with suitable starting products. For multi-site operators, the Atollspeed AS301 offers additional advantages. Complete meals or individual components can be prepared centrally and later regenerated directly from chilled storage at each location – with the same flavour, the same texture and the desired presentation. Standardised programmes enable simple roll-outs across regions or countries, reduce training requirements and ensure that even new or changing staff achieve consistent results from day one.
