Baking and snacking at the PoS
The Mix & Match station is the space-saving and energy-efficient entry into the snack business. The ready-to-plug-in station with 230-volt connection consists of the WIESHEU Minimat 43S oven and the Atollspeed 300T plus high-speed oven. The combination is used to bake, heat and regenerate baked goods and snacks at the PoS. The station can be easily moved and securely locked in place on its four castors. In addition to the six shelves for baking trays, the Bäck'n'Snack station is also equipped with a storage compartment for gloves and baking shovel.
The Minimat can be used to produce baked goods from fresh dough, frozen or half-baked dough pieces. The capacity of three baking trays (440 x 350 mm), the integrated programme control, the two fan speeds and the tank solution for steaming without a water connection are ideal for small areas or temporary outlets. Depending on local conditions, the oven can also be permanently connected to a water supply.
The oven is complemented by the AS Atollspeed 300T plus high-speed oven. Chilled and frozen products such as bread snacks, burgers and pizzas are prepared up to 20 times faster with the hybrid oven technology than with conventional methods. Chilled products are prepared in just 30 to 90 seconds, while frozen products are ready to eat in two to three minutes. The high-speed oven combines the positive properties of impingement and microwave technology. With impingement technology, a high-speed air stream is directed onto the food using nozzles.
‘Burgers, hot dogs and, above all, pizza have long been established and are increasingly being offered as vegan, vegetarian or regional options. That's why WIESHEU and Atollspeed have developed a pizza concept together with Dr Oetker Professional,’ explains Julia Rümmele-Hauser, Head of Marketing and Product Management at WIESHEU. ‘Fast and healthy dishes such as hand sandwiches and bowls are also on trend. Hand sandwiches with savoury and vegan ingredients can be produced centrally, stored chilled in the counter and regenerated quickly in the high-speed oven. You can produce the breads yourself and fill them with your own creations.’
